First and foremost, the cakes from the Ace of cakes bakery are the most beautiful cakes i ever seen in my life. I am not a clean freak but I can't help it...when I watch the show Ace of Cakes...I noticed they don't wear hair nets, everybody touch the fondant with their hands, the cakes are brought to their destinations on the floor of an open van. Has anyone ever measured the bacteria content on those cakes? I would not eat one bite of those beautiful piece of arts. Would you eat those cakes as they are prepared now?

yes...looks can be deceiving but be careful about acne...You'll never know when youll get struck.

I have wondered EXACTLY the same things! After catering tons of weddings, I saw wedding cakes be attacked by ants (and wiped off by the bakery delivery guy...then EATEN by wedding guests!), hands all over the fondant, etc. Now, I NEVER eat cake at weddings or celebrations! I can't...it grosses me out!
Did you see the Ace of Cakes where Duff delivered the cake to Los Angeles for the Harry Potter premire? He drove it, uncovered, from the East Coast to the West Coast. I'm sure those people paid thousands of dollars for that cake, too.

Yes you may be right but you don't have to eat the fondant simple eat the cake and put the cover (fondant ) at the side.
